Life Lessons From Clovis Taittinger

17 APR 2022

What can champagne teach us about life? Quite a lot, as it turns out.

At our recent Taittinger tasting session at Culina, we had the pleasure of chatting with Clovis Taittinger, Managing Director of the maison and fourth-generation family member of one of the biggest champagne houses today. Clovis talked us through a few of their champagnes, including a very special Comtes de Champagne Blanc de Blancs 2011, the first time it had ever been released in Singapore. He also gave us some valuable insight into embodying the spirit of champagne and just enjoying life.

On the palate, the Taittinger Prestige Rosé can be summed up in four words: lively, fruity, fresh and elegant.

Clovis Taittinger joined Comoclubbers live on Zoom to talk them through each wine for a 5-course pairing menu at Culina Bistro.

Champagne Lesson #1 There is no such thing as the perfect occasion

The mere mention of champagne and most of us conjure images of glamour and decadence. But champagne doesn't have to be reserved for major life milestones. Whether you're toasting a new job, celebrating a friend's birthday, or simply enjoying a quiet moment at home, popping open a bottle of bubbly makes any occasion feel special.

And champagne is such a versatile wine that it goes well with almost any kind of food. Whether you're indulging in a delicate caviar dish, tucking into your favourite pizza, or enjoying a fresh order of fish and chips (a Clovis favourite!), a bottle of champagne will pair just nicely.

Champagne Lesson #2 Don't restrict yourself to the rules

For some reason, there seem to be a lot of rules around enjoying champagne and wine in general. What food to pair, what glass to use, which angle to pour from, sometimes it just gets downright stuffy. Clovis believes that to enjoy champagne, we need to stop overthinking it. We don't always have to follow what's written in the books or what some wine expert says. To truly enjoy champagne, we need to build our own experience, form our own opinions and free ourselves to experiment. "It's the best way to be happy," he advises.

Champagne Lesson #3 Everything tastes better when you're sharing it with people you love

Imagine enjoying a beautiful bottle of champagne, surrounded by loved ones. The conversation is lively, the laughter constant. Everything tastes better when you're in good company, and that's certainly true for champagne. This is what Clovis feels a good bottle of champagne should do: make people happy. And to him, there's nothing more pleasurable than that. When we share a bottle with someone we care about, it becomes an experience that we remember fondly long after the glasses have been cleared away.
