Bring along this traditional Christmas pudding by Iggy's as a fittingly sweet end to any festive gathering. It was first created in 2020 as a bespoke commission for a long time Iggy's guest. The Christmas pudding is made from macerating dried cranberries, prunes, sour cherries, sultanas, black raisins, red currants and dates in Hine Cognac and Grand Marnier for more than 12 months. Low GI coconut sugar is used as sweetener.
To serve, please remove the pudding lid, cover the tub with an aluminium foil and steam for 30 minutes, then rest for 5 minutes. Remove foil, invert pudding onto plate and prepare to flambé. Recommended to flambé with either brandy, whiskey, rum or Grand Marnier and serve with brandy sauce, double cream, or even ice-cream.
